A cat wouldn't just rip of the head and eat the innards, leaving all the parts.

Mr. DarcyCat rips heads off of birds and mice...doesn't do innards, though.

That's why I think it's a critter. Had more strength than just a cat, but not so much as a dog. Besides, I think a dog or coyote would carry it off. Not just the head.
