I read that article and the term "saponins" seemed familiar. I grabbed my bag of quinoa (a grain) and the directions were to rinse the quinoa before cooking to wash away any "natually occuring bitter tasting saponins". It went on to explain that "Saponins are soap-like substances that occur on the outside of the quinoa grains. It is believed they are put there by nature to deter insects and birds."

So saponins deter insects, birds and LDL?? Kewl.
