I haven't seen much except the original series, a little DS9 and the Next Generation...maybe I just didn't get enough to get burned out. ;-)
But...I'm also someone that can watch a movie over and over and over and still enjoy it. I'm odd that way.
I'm so fortunate to have married as big a scifi nut as I am and we've given all the Rodenberry series a fair shake. We really liked Earth: Final Conflict. It was the most original of his ideas. Andromeda is a close second for the same reason. But both became soap operas. EFC is cancelled. Andromeda got picked up by SciFi channel and committed the "Witchblade" suicidal plot maneuver: everything starts over 'cuz the writers wrote themselves into a corner.
We're really looking forward to Battlestar Galactica this winter. Will be nice to have a fresh storyverse to follow.
