Sunny Ham and Eggs
15 ounces frozen hash brown potatoes
1 1/2 cups Swiss cheese, grated
1 1/2 cups ham
1 1/2 cups Monterey Jack cheese
1 cup mushroom
3 eggs
1/2 teaspoon seasoned salt
1/4 teaspoon paprika
1 tablespoon parsley, chopped
Cut and fit frozen hash brown potatoes (thawed) into a greased 9" pie pan. Press in firmly. Brush with butter and bake at 425 degrees for 25 minutes.
Remove from the oven. Reduce the oven temperature to 350 degrees. (*Sorry, tuliptree76)
Into the pie pan, layer grated Swiss cheese, ham, Monterey Jack cheese, and mushrooms.
In a small bowl combine eggs, seasoned salt, paprika, and chopped parsley. Pour over the pie. Bake for 30 to 40 minutes, or until the center is set. Remove from the oven and let stand for 10 minutes before serving.
Makes 8 servings.

PAL, the knob on my oven had all of the numbers except for part of 400 and 450 degrees worn off of it. So that made it a tad bit difficult to use. I called maintenance about it.
Well, they sent a person over yesterday to change it. I wasn't home a the time. But when I came back I found a new knob - that's upside down. *sigh* I called again and they are supposed to replace it.
