I love to take chicken, fry it in a little oil, chop it up and serve it on tortillas with shredded cheddar, black beans and slices of avacado...and picante sauce to taste.

The jedis like these chicken fajita things too, but just with the cheese and chicken. It's simple, it's quick and it's easy to just pick up and eat.

I truly admire you, sis. I just don't want to deal with chopping and slicing and all that jazz, unless it's for more than just me and the kids.
Grab raw chicken, stick it in a bag, shake, bake and serve. If you're lucky I'll fix some of those instant taters and open a can of corn. *laughing*

Well, I will admit...Steve is usually right there helping and he does help clean up afterward too...so I can't take all the credit.
But by myself, (like when Steve is in school), I freqently open cans too!! Or cook TV dinners or frozen pizzas...
It's not the cooking I hate, mind you...it's the CLEANUP!

If you want to go fancy one night instead of easy tacos make a mexican lasagna. Layer taco meat, cheese and a can of diced tomatos in cooked lasagna noodles, pour a can of enchilada sauce on top and then some more cheese. Bake 30-35 min. at 375.
You can add other stuff to it(corn, beans, onions, etc.) if you want to be Bon Appetite!

I like chicken fajitas too, but my recipe is a little different... I use shredded cheese, sliced black olive, chopped tomato, shredded lettuce, Pace picante sauce and some sour cream as toppings. Rose takes the same ingredients but turns it into a salad by going without the tortillas and just mixing it all up in a medium bowl.

I make my fajitas vey simple... Marinate the meat in a McCormick seasoning mix packet, then cook lots of peppers and onions with the meat, serve on tortillas with cheese and choice of toppings.
In fact, that is the plan for dinner tonight.

Did that Saturday night. And we ate out yesterday. Our main local grocery store does great fried chicken. We did that too. I did manage to cook dinner three nights. And we've done all the lunches and breakfasts at home.
