I've always felt it strange that the pork butt comes from the front end and the ham from the rear end of a hog.
Mo, here is another southern expression for you...eating high on the hog. It means eating really good food. My brother says that the expression came about because when a hog is slaughtered, it is hung upside down and the ham is the high part of the hog...and the best part.
I would offer up that the pork tenderloin, is the highest and the best cut of swine flesh. But then, I like it all: chops, thin or thick, bacon, ham - it's all great.
