LOL...I don't mind hugging or kissing family and good friends. But, southern women were not raised (reared is correct, actually) to shake hands with anyone. But with strangers, we just nod and smile. I was quite shocked when I went on a job interview here in yankeeland many years ago and the employer extended his hand. I thought 'oh no, is he going to kiss my hand?'.

Oh Gawd, in that case, you, of course, extend your right hand and give him a brief, firm shake. One shake and reclaim your hand promptly. :)
If they are crass enough to be seated before you, take your seat promptly. (then sneak mail them a book about manners)
A man is supposed to remain standing until you are seated. If he is 80 and on oxygen, be merciful and seat promptly, if not, take your time and enjoy. :) (within reason)
