Crazy Chicken
Ingredients:
9-10 chicken pieces (legs, thighs)
1/3 cup lemon juice
1/3 cup lime juice
1/3 cup olive oil
1 t. garlic powder
1 t. chili powder
1/2 t. salt
1/2 t. pepper
Braise chicken until cooked thoroughly in a deep skillet with about a 1/3 cup of water to keep it from burning.
Allow chicken to set and cool after cooking while you mix the rest of the ingredients in a shallow bowl.
Place slightly cooled chicken pieces in lemon/lime mixture, turning to lightly baste both sides.
Place chicken on grill (or in broiler) about 6 inches away from heat. Allow to cook 5 minutes longer on each side, until browned, basting with more lemon/lime mixture every minute or so to keep moist.
Carbohydrates wont be too high, even with lemon/lime juice as much gets dripped down into the grill and/or cooks off.
