Chicken Cacciatore
1 (2-3 lb) frying chicken
1/2 cup olive oil
1 clove garlic, minced
1 medium onion, sliced
1 teaspoon rosemary
1 bay leaf
1/2 cup white wine
1/2 cup tomato sauce
1 1/2 teaspoon parsley
1/2 teaspoon basil
1/2 teaspoon chili powder
1 teaspoon sugar
salt
pepper
1 cup sliced mushrooms, sliced (optional)
Cut frying chicken into pieces. Cover the bottom of a large frying pan with olive oil. Saute minced garlic and onion (sliced thin) with the chicken until the chicken is slightly browned. Add rosemary, bay leaf and wine. Cover and let cook for 15 minutes. Remove cover and let chicken fry a little. Add tomato sauce, pepper, parsley, basil, chili powder, salt and sugar. If desired, add mushrooms (either fresh or canned). Cover and let simmer about 1 hour, or until chicken is tender and done. Serve over rice or pasta.
I like to use raw tomatoes instead of sauce, no sugar, and add green pepper.
