Elf-boy would live on peanut butter alone if allowed. I was shopping for goodies when he and PE were sicky at home, and found some peanut butter - chocolate swirl ice cream. He just about refused to even try it because it is ice cream. I scooped myself a bowl and finagled him into trying a small spoonful. He came back and tried another small spoonful. The third time he came back, I asked him if he would like a bowl for himself. He said he would, and the rest is history. Last night, there was only one serving left in the box.

Peanut butter ice cream... You know, he was asking me to make peanut butter muffins the other day too. I had never heard of such a thing before! peanut butter muffins?!

PEANUT BUTTER BRAN MUFFINS

1 1/2 c. 100% Bran cereal
1 1/2 c. milk
1/2 c. creamy peanut butter
1 1/4 c. all-purpose flour
1/2 c. brown sugar, firmly packed
1 tbsp. baking powder
1/4 c. butter, melted
1 egg, beaten
1/4 c. salted peanuts, chopped (optional)
In medium bowl, combine bran and milk. Let stand 5 minutes. Stir in peanut butter. In large bowl, combine flour, brown sugar, and baking powder. Stir in bran mixture, butter, and egg just until blended. Fill greased 2 1/2 inch muffin pan cups. Sprinkle with nuts. Press lightly into batter. Bake at 400 degrees for 20-25 minutes or until toothpick comes out clean.
