I do not know what to avoid, but here are some sources for mail order grains. Whole Grains store better than flours, which go rancid after about 6 months.

If you are serious about having whole grain you need to have a grinder to mill the grain. Wondermill is very good option. The demo video in the link below shows them milling something like 1/2 ton of wheat in 10 hours so it should meet everyones home needs!
