After all these years, two processes for turkey cooking escaped my notice til this year: brining, and spatchcocking.

Oh, and here is the finished result of my dry brining the turkey and then smoking it. As you can see a deep rich glowing brown color that you won't get unless the turkey is brined. And, yes, it tasted as good as it looks.
