Gelatin such as Knox Gelatin can be substituted for eggs. 1tsp of gelatin + 2 Tbls cold water + 2 Tbls hot water = 1 egg, for use in baking. Storage for gelatin is good for decades.

Gelatin is made from pig skin.

It is also a feed stock in pharma.

I have contacts in that field.

The skin supply is drying up. Most plants have some finished inventory on hand, but not a lot.
