Ok, while your young and lucky, crank up the alcohol content. Sweeten just before capping.
I have a cider working right now using a kit called “FastFerment”. Seems to be working great so far. The plan is to start getting into meads next.
Take a look at the FastFerment kit http://www.fastbrewing.com/products/fastferment. Makes brewing as easy as it can get.
