Finally got to my library and looked up this book I have that may help you with not just your specific question but also London history in general.
It’s entitled: “ London: The Biography” and goes into real detail as to the origins, history and development, and areas of London. Chapter 57 deals with the history of water front activity on the Thames in London. I just skimmed it bit and it looks as if it may be of great help to your project.
I’m sure you could find a copy on Amazon...
