Just for the record...I am not a Roman Catholic. I am a Christian...a follower of Jesus Christ.
Unam Sanctum's (1302 by Pope Boniface VIII) claim to absolute power in both the spiritual and temporal worlds is a problem for some in catholicism. Hence the amendment of this claim with the ex cathedra decree.
Unam Sanctum did not just limit the pope's power or authority to when only speaking from the "chair of Peter". He was staking out a claim for ultimate world authority.
the idea of papal infallibility is an interesting study. This link to the wikipedia article in an interesting read but is by no means the final say.
The intriguing thing about papal infallibility is so far no catholic has been able to produce a definitive list of every "ex cathedra" statement by the pope. One would think for the group that claims to be the official church the RCC would be able to say for sure when their leader has spoken "ex cathedra".
It leaves the individual catholic to decide what is authoritative in catholicism.
Contrast that with the writings of the NT which Christians consider to be all authoritative.
Do you think that some strict adnerents would consider you heretical if you do not agree with them?

All good information and I had reached the same conclusions. However, I was really trying to get the opinion of an an orthodox, Pope inspired, Catholic who is seaeching for justification in trying to express doubt in infallibility, and how his brethren would respond. I know how they responded during the Dark Ages. What about now?
I cannot answer your question for sure. However, I suspect they'd consider them to be a heretic...or worse.
Their disparity, and utter absence of any mention of a pope, Mary and the Eucharist is contrary to R Catholicism, but these 7 churches of Rv. 2+3 were not all said to be teaching doctrinal error.
The sin of Ephesus was one of the heart, leaving their first love while being diligent in deeds. The church in Smyrna saw no reproofs, only commendations, while the church in Pergamos was guilty of having some that hold the doctrine of Balaam, as well as the doctrine of the Nicolaitans.
The industrious church in Thyatira had this against them, that they suffered that woman Jezebel, which calleth herself a prophetess, to teach and to seduce believers to commit fornication, and to eat things sacrificed unto idols, seemingly part of "the depths of Satan."
The external showy church in Sardis had this against them, that they had a name that they lived but were overall dead, falling short in their works/fruit before God, and only had a few even in Sardis which had not defiled their garments.
The afflicted but preserving church in Philadelphia only saw commendations and exhortations, in stark contrast to the lukewarm church of the Laodiceans , which thought of themselves as being in need of nothing, and knew not that they were wretched, and miserable, and poor, and blind, and naked.
But even the last was not guilty of all the inventions of Catholicism, as well as its overall liberalism .

Well; oil is SO expensive now; and, the cost to heat it to a boiling point is just plain astronomical; so non-Catholics (and any RCC members who do NOT appear to accept everything from Rome) merely have to endure a barrage of names and slurs tossed ever so gently their direction.
Why does it take a Prot to show the FACTS recorded about the 7 churches?
Couldn’t an RCC member have pointed these things out?
Since none of these churches are in Rome, nor indicate any allegiance to it or to a pope, or devotion to the Eucharist or Mary - the 3 main things which basically unify R. Catholicism - and instead the 7 churches in Asia testify to a diversity that is quite contrary to Catholicism, and may have their candlestick removed, then they are of little to no worth to RCs whose primary directive is to promote the preeminence of the unScriptural church of Rome.
