To convert from a gas stove to an electric one means the installation of a special 220 Service. And so, there is “more” electricity going to the house.
And where does that electricity come from?
BTW, I live in a trailer with a propane stove. I only need a tank-full of gas delivered every couple of years.
My electric bill is so low, the company had to impose a “minimum”, as did the propane company.
They can have my propane stove when they pry it from my cold dead hands.

We have the same nonsense going on here in Western Washington. They are not allowing he gas companies to extend their lines. No new “carbon” infrastructure. Of course the price of electricity which used to be dirt cheap here because of hydroelectric has gone up over five times since we first bought our house. This is of course to pay for all the “green” energy projects. We also have the wood stove ban here.
It is also dangerous potentially in a home, from the perspective of asphyxiation and explosions, or accidentally catching fire. There aren't too many people dying of those things from electric ovens.
Let's say your electric range costs $200 more per year than the gas range. That's not an immaterial amount of money. However, you've de-risked your home and family of junior accidentally leaving the gas on all night or some rare but not-uncommon explosion.
It all comes down to your utility curve, and a full review of costs and benefits. And now...not only do I want people off my lawn, but I want them out of my kitchen, too.

Actually, a cook stove on Propane is a LOT cheaper than an electric stove, even with the cost of propane what it is.
Expensive for generators maybe, but very cheap for just cook stoves.

Yep, isn’t “camping” great? We are the same way, Propane serves us very well. It is amazing how much cooking you can do on a propane stove compared to an electric per dollar. Propane stoves even use half as much gas flow as a natural gas stove for the same BTU output. We can put a five gallon can on our coach and if we just use the cook stove we can make it almost three months. That is a cost of only about $4 a month. But in turn, an electric water heater is cheaper to run than a propane hot water heater.
It is not stupid, it is a purpose driven attempt to harm American economic strength.
Anybody who cares about his kitchen wants it to have a gas burning stove. Has anyone EVER seen a professional chef using an electric stove?
Anybody who wants hot water in the winter will be disappointed if he relies on electric power — unless he makes a very expensive conversion to an on-demand unit.
As for safety — get real. You must have never lived with gas appliances, to be possessed by such an irrational dread.

Yes they do... they are not huge double doors but they make fairly large ones for RVs. All you have to do is change the orifice from a propane to a natural gas orifice in the controller. some are 3 way, 110v, 12v, and gas LP or NG.
You are right about the Propane stove using less gas to do the same cooking. A propane stove even has to have smaller orfices for the gas to keep the flames below WW2-Flame-Thrower Level.
I found THAT out the hard way! LOL!
Modern natgas generators can throttle up and down, responding to demand. But yeah, it is foolhardy to utilize wind and solar as more than minor supplements to the grid.
