20% of 2.5 million cooks are illegal. That's just ONE segment of ONE industry. Just how many illegals are in the US? About 5 years ago, the guestimation was 1 in 8. They must have documentation for freebies. Yet, ICE can't seem to find them.

Now, see, Obama is filling the jobs need and boosting the economy with all these illegals he's bringing in. Hope and change.

And just how many of these illegal cooks are not vaccinated and may be carrying some third world disease into the US? And thus spreading it amongst our population.

And yet, in the last few years, quite a few young people i have become acquainted with, tell me that they went to culinary school and have not been able to find any kind of a job in the restaurant industry — not any kind of job whatsoever!

Back in the late 70s I worked at the Stage Deli on 7th Ave in NYC. Every night we had a different dishwasher whose name was Jose.

The manager gave him a $20 bill and a sandwich for his work.

2 of my favorite Japanese Sushi restaurants are now manned by Hispanics. Not one Asian sushi Chef anymore. The food quality is now like me, GONE (from their establishment)!

Now I understand, we need to embrace illegal immigration in order for urban elites to continue to enjoy their favorite eateries. We would not want them to suffer inconvenience.

Back in the 80s they regularly raided restaurants in South Florida who were using illegal Haitians as dishwashers.

we have two restaurants in my area that allegedly have “illegals” in the kitchen. I refuse to go to them. The others are better restaurants anyway.

There has been 11 million illegals for 20 years. They never increase or decrease in ranks?

There are well over 40 million illegals in the USA.

The 11 million number came out how many decades ago and we’ve been experiencing millions more every year for decades.

In 2007, the “real” number was projected to be 38 to 40 million even as the government and media repoted only the same ole 11 million; “Indeed, 38 million to 40 million illegal aliens were estimated to reside in the United States in 2007 - see Illegal Aliens: Counting the Uncountable by James H. Walsh, The Social Contract, Summer, 2007.” http://www.cairco.org/issues/how-many-illegal-aliens-reside-united-states-elbel

Does anyone think those kinds of numbers are still relevant today, considering the Democratic Party of America’s deliberate importation of aliens? No, I doubt it. The real number is probably more like 50 million plus today.

The article cited as one problem the high cost of living in big cities with world-class restaurants.

This is why the industry needs illegals who are willing to live with 12 other people in a cramped apartment, the only way one could afford to pay rent in NYC on a food prepper's wages.

Young American kids can't get the low level entry level jobs they used to get.

American blacks are thrown on the ash heap of the permanently unemployed...

But Democrats don't care - they're putting dependent illegals in the voter pipeline....

So what if they steal jobs from Americans, right? /s

A few years back I was considering doing the accounting for a local popular Greek restaurant. As the owner was giving me the “Cook’s Tour” I was asking him questions about procedures and how they did certain tasks to probe for inefficient activities. When I asked him “...do you do this...or do you do that...”, he replied “...No, that’s what I have the Mexicans for...”.

I didn’t take his work because it was clear to me he wasn’t going to keep proper records or do things the right way. A few months later he was out of business. I wonder why...

For fun I check out visadoor.com
This article found me looking at chef, cook, food service and restaurant.
In 2014 listed are 154 applications for chefs. Found a certified h1b visa for a restaurant supervisor position at $15.00/hr (prevailing wage $11.90). Cant believe a qualified US citizen couldn’t be found. No STEM required.

So they’re freaking out about possible losing their people but not freaking out about breaking the law by hiring them to begin with? Maybe if there was some real punishment behind hiring illegals then they wouldn’t be in this mess?

Long hours, low pay, and a series of other cultural and economic factors have made lower tier restaurant work a much less desirable path than it once was, leaving many kitchens chronically understaffed.

One of the clearest obstacles to hiring a good cook, let alone someone willing to work the kitchen these days, is that living in this country's biggest cities is increasingly unaffordable. In New York, for instance, where an average cook can expect to make somewhere between $10 and $12 per hour, and the median rent runs somewhere upward of $1,200,

And what would the the free market response to that be?

"OPEN THE BORDERS!"

No, the other free market response.

You see, the problem is that the job doesn’t pay enough to live, especially with rents so high, and the cost of living so high, so the answer is to hire Mexicans. Because... ?

How about this. Secure the border. Agree that you will have to hire from the enormous pool of workers who are already here. If that means the salaries rise, then the salaries rise.

There are kids all over America who can’t find work. There are experienced adults all over America who can’t find work, for that matter. Replacing them with eager foreigners is a bad answer.

I worked in a kitchen for a while. I was chased out of my job by the “Mexican Union”. They harass someone until they can’t take it any more, that person quits and they get one of their buddies in his spot.
Repeat.
When they finally have a majority of the kitchen staff, they go to the boss and say we all get a raise (over $1.30..... including the 19 year old kid who couldn’t tell the difference between an onion, a shallot and a scallion) or we all walk.
The boss allows it. Then they offered me .07 cents.
I quit.

The economy has not improved as stated. Illegal immigration has not gone down since 2007 as stated. This article is total b.s.

Roberto wrote a political fairy tale that urban America can’t eat out unless we get as many Mexicans as we can get over the border, pronto to work in nasty kitchens.

Is his assertion that Mexicans are moving back over the border (faster than they are streaming in) true? I know that many Mexicans who retire on social security move back to Mexico. I also know that Obama has used the State Department to ship in illegals from South America, Africa and the Middle East. I know they brought in a lot of illegal children. I have no idea where they are from.
