It has to be a collaborative effort, i can’t think of single Smokehouse that would do 8K lbs. Anyone else know?

If you want to get really technical about it, it’s a LOT more than 300 cows. After all, brisket is only a small part of a beef carcass.
And a very tasty part of it, when prepared properly.
come on, Rudy’s is OK and they have multiple locations.. and I’m looking forward to the Ball at the Convention Center will will probably be an oversold crush with Hands Up Don’t Shoot protesters in attendance...

I do not recall the name but I do believe there is a place in Tx that does process these size order’s to ship worldwide.
We can safely say it is not the guy in the shack on the side of 380.
Slow cook a brisket in any one of several gravies from onions and carrots to molasses/BBQ sauce. When it falls apart at the touch of a fork, you know it is done.
Goes well with mashed potatoes, green beans, (don’t use horseradish), potato latkes, Green Bean Casserole, spinach and even French Fries.
Love their BBQ Ham and hot rolls.
