Considering the romaine recall going on now, I'd buy a whole head of romaine and shred it myself for the chicken burrito (it's what I usually do anyway).

Well, I’m not a member of WW. But my hubby isn’t as lucky as I am (I’ve got a fast metabolism)....so I have to tailor some recipes to fit his dietary needs. We’ve gotta do what we’ve gotta do, right? :) And actually, this recipe doesn’t taste like a lightened version, which is why I loved it.

It was delicious....especially with the toppings on it. My faves were the black beans and ‘light’ guacamole. There’s no need to put sour cream in guacamole IMO....and avocados are good fats. Love it!

I made a mint/babyspinich/avacado/ english cucumber pureed dressing the other day looking for a tasty light change.

I had left over everything so I made a 2nd puree and instead of mint used fresh cilatro the whole bunch.

FYI.

I have been using it on my rice/bowl of chili/vegan sandwhich ect...

I’ll bet it goes great on your light Chicken burrito.

Matter of fact I was going to cook/bake up some lemon garlic chicken and leftover rice with the Cilantro/avacado/babyspinich ect. puree today.

I realize this recipe uses chicken breasts, which assures there is no extra fat in the recipe, however don't be fooled by "ground chicken" which includes skin and is fattier than you would think.

4 oz each:

Ground Jennio turkey: 120 calories, 1.5 grams fat

Ground beef 96/4: 140 cal, 4.5 gr fat

Ground chicken breast 130 cal, 1 gr fat

Ground chicken 170 cal, 11 gr fat
