I made a mint/babyspinich/avacado/ english cucumber pureed dressing the other day looking for a tasty light change.
I had left over everything so I made a 2nd puree and instead of mint used fresh cilatro the whole bunch.
FYI.
I have been using it on my rice/bowl of chili/vegan sandwhich ect...
I’ll bet it goes great on your light Chicken burrito.
Matter of fact I was going to cook/bake up some lemon garlic chicken and leftover rice with the Cilantro/avacado/babyspinich ect. puree today.
Oh. My. Gosh. Your puree sounds delicious. I’m going to try it out. Did you use just a little mint; more spinach, avocado and cucumber?
