I’m sure I can think of another one after the coffee kicks in, but I like the ending of “500 Days of Summer.”
A lot.

A Boy and His Dog starring a very young Don Johnson. Not a conventional or expected ending, but damned funny.

How about 1985’s “Witness”, when Jan Rubes says to Harrison Ford “You be careful out among them, English.”
Another one (in the James Bond category) is 1977’s “The Spy Who Loved Me”, in which Roger Moore comments on (concerning recently dispatched villain Karl Stromberg) how anyone who drinks Dom Perignon 1952 can’t be all that bad and then tells Barbara Bach that in his country a condemned man is allowed one final request.

Three Days of the Condor.
Higgins: Hey, Turner! How do you know they'll print it? You can take a walk. But how far if they don't print it? Joe Turner: They'll print it.

Kudos to selection of Roman Holiday and The Bad Seed. I would
like to add The Third Man and Detour. Oh, and The Godfather. “Go away Kay, the men have business to conduct.”

I’m thinking that one of the best endings is Planet of the Apes, where Carlton Heston’s character finds the top of the Statue of Liberty sticking up in the sand and realizes that he’s been on earth all the time.
