OK Anyone have any good "Cinco De Mayo" Recipes?

Down here in Texas was sure do celebrate Texas Independence Day this year myself and 8 other son’s of the Republic went to a popular Mexican restaurant at happy hour sat down got shitty drunk on Shiner Bock ( a Texas legend in beer) , and played Pat Green, and George Strait all afternoon on the juke box while Texas 2 stepping all over the bar with our girlfriends. The bartenders also Native Texans thought it was hilarious we chose to come to a Mexican restaurant where the kitchen staff was all fresh across the border and rub there noses in it ha ha eat that Mexicans. We were sure not to order food, and tipped our fellow Texan bartenders 40% too.

I did. Leading up to the date, I flew the Goliad Flag and the Gonzalez Flag of 1835. Now I need to have a custom Moseley Baker San Felipe flag made.

And don't forget to fly your appropriate flag on San Jacinto Day (April 21).

My favorite flag is the Bonnie Blue. Besides being a Lone Star, it has other “connotations” which those familiar with the flag will appreciate.

Typically Colby, “The term ‘longhorn’ refers to a cylindrical shaped mold in which it is made, which produces a cheese that is 13 pounds and is 1 and 1/2 feet long.”

This is a handy way of preparing it for retailers, because the cylindrical cheese can be wire cut to produce uniform thin 1 pound wheels.

And is the cottage cheese regular cottage cheese or farmer’s cheese, like say, quest blanco?

Regular or low fat is fine. Mexican cuisine is just as likely to use cottage cheese as it is ricotta. But that gets to the question of authentic Mexican vs. Mexican style.

The former almost never uses cheddar, preferring the white Mexican cheeses.
