Anyone know the science behind the declared depths of the mantle and deeper? Or the earth science that yields these theories? (I mean, if we’ve never been closer than 65,000 feet to the mantle... How the heck do we know a thing? From observing planetary development?)

To the best of my knowledge, the mantle and core depths are based primarily on echoes through the earth of earthquakes, underground atom bomb tests and other large underground noises. Similar to the way underwater things are measured with sonar, I think.
