Humans are genetically unable to produce the molecule, which occurs naturally at high levels in lamb, pork and beef. Only very low or undetectable amounts of the sugar are found in fruits, vegetables, hen's eggs, poultry and fish.

They also demonstrated that the body may view the molecule as a non-human invader and launch an antibody-based immune response against it.

Interesting, yet as a kid, it was hen's eggs and wheat; and later, cow's milk, that gave me trouble with hives & allergies. I "out grew" the first two while in grammar school; had problems with the milk in junior high, then out grew that, too.

About 1994-5 I developed an allergy to shrimp, but by taking a Benadryl first, then eating 'low doses' of shrimp, I can now eat 5 or 6 without taking a tablet first, and not have any symptoms.

OTOH, I have NEVER suffered any kind of allergic/inflamatory reactiopn to beef, pork, or lamb.

I have always had a gagging problem with mutton, though. ;-)
