Before the food police came along we never threw grease away after the first cookin either. Just kept it in a pot on the back of the stove for re-use and seasoning.

Not a pot ... a Crisco can. Back when Crisco cans were made of metal.
I grew up with three cans on the back of the stove; a normal-sized can of Crisco for Crisco grease (the common stuff for frying up most things), and small cans for bacon grease (valuable, and used for seasoning), and cooking oil (expensive, precious, and not to be wasted). When you cooked fish, you poured the leftover grease into a jar, put the lid on, and threw it away.

Bacon grease! They used to make containers you kept sitting out on your stove, and you'd save any bacon grease in it to use for cooking. Nobody ever got sick from it either!!

I just moved it to the 'frig. Still used my bacon grease - got to have it for greens, beans, cornbread, etc.
