Seriously, wouldn't the pungency of the mustard overcome the flavor of the garlic?
The only time I'll recommend buying French is for Dijon mustard: Grey Poupon! It's mild. It only takes around 1/4 teaspoon to emulsify 4 servings of vinaigrette, for example. Plus the flavor of good Dijon isn't "in your face" strong and pungent. Using some mustard powder also works, and is milder yet, but to avoid lumps you have to sift it or mix it in with a little dressing that's added back into all of the dressing. I don't use a high ratio of "processed" mustard because it's high in sodium. (Gray Poupon is lower in sodium, however, than the cheaper brands usually are.)

I guess I'm used to the commercial ones here (knock you upside the head and abuse you with mustard flavor...) and not learned yet to appreciate the subtle flavor of home ground mustard or Brown PooPoo Grey Poupon

I make a fried rice that I love using mild sausage (which is now usually lean ground pork that I season myself: I have sea salt, whole cloves, peppercorns in their own little spice grinders from Oxo and find that and a little garlic powder is sufficient seasoning, although for this particular recipe I skip the salt. The freshly ground spices over the tops of ground pork patties fixed on the George Foreman grill are awesome! But I digress....)
I sauté sweet onion and red and green bell pepper in with the "sausage." I sometimes add fresh ginger and/or some chopped candied ginger, too. Add rice that's been cooked in chicken broth. (I'm a HUGE fan of brown basmati rice lately!) Add some slivered almonds. Season with a little soy sauce. (I use Bragg Liquid Aminos.)
I sometimes add steamed veggies or stir-fry in some beaten egg, or both.
Easy and delicious! (Also one way to use up leftover take-out white rice; just zap the rice with a little Minor's Low Sodium Chicken Base and water -- or chicken broth and let it absorb the liquid before adding it to the sausage mix.)

There's one in Clinton and one in Norwich, too far for me to travel after work. I go to the wellness center here but it's not very large. I could go to the university's fitness center but can't walk all the way over there during lunch. It's too far for me to walk. Maybe I should start a Curves?????
