"When was the last tim you heard of an "anglo" lettuce picker?"

Ever been to NC or SC? Plenty of "Anglo" lettuce pickers and, until tobacco went #1 on the "Evil" list, Tobacco pickers also. How about lumber mills, most folks in those areas "Anglo" work for less then minimum wage. That's assuming some POS business person did't decide to hire "Illegals".
