Catholics believe that those verses in Matthew represent the Catholic Church because the Catholic Church is the only Christian Church that has been around since the time of the Apostles.

Personally, I don't believe that Jesus said those words to Peter, but kept to Himself that He wouldn't "really" establish His church until the 15th century. IMHO.

Then why didn't He just wait until the fifth century to make His appearance?

I don't believe any church that we now know was around at the time of Christ. I think he meant that Peter was suppose to spread the gospel. Jesus was not refering to a specific denomination.
