YOUR TURN!!!!
I've had more than one request for some recipes that are fast and especially good for a single serving...well;
Artichoke Soup Uno
A great soup for one, that can easily be multiplied to feed more ...a lot more.
1 1/4 cup chicken stock
1 scallion (green onion), thinly sliced
1 tsp. lemon juice, fresh is always better, or 1/4 t concentrate
3 cooked artichoke hearts, fresh, frozen, or canned, cut into bite sized pieces (of course fresh is by far best, canned requires draining)
Salt and freshly ground pepper to taste
2 Tbs. heavy cream ( you may sub canned evaporated milk)
1) Bring the stock, scallion, and lemon juice to a boil over high heat.
Add the remaining ingredients and return to the boil, stirring occasionally.
Serves 1.
