So far, all of the Celtic Orthodox sites that I've been able to find have mentioned Holy Tradition and the consecration during the Liturgy (Mass) and have not mentioned
Sola Scriptura.

I believe you are correct.In Presbyterianism also, we believe that the Bread and Wine are Under the Blessing during the celebration of the Lord's Supper.
Yet they remain -- Bread and Wine:
