Anyone know if there were legal grounds for challenging the students' registration. Perhaps legal residency was in question for students who hold legal residence out of state?

No, this little ploy has been done on military installations too. Many times people have been denied the right to vote because they were military and dependants. Even though they were also taxpayers of the states where they were stationed. This is along the same line I believe.

He's probably claiming they are/should be registered elsewhere, and that they are not "residents" there even though they attend college there.
Of course, this didn't stop the liberal students of Berkely from deciding the fate of the city where they attend school, so why should it here?

What was the reasoning given? It can be assumed that the injunction was granted because of some question over the legal residency status of these students in the state of AR. Perhaps they are being told that as residents of other states, they are registered to vote there and required to vote there.
If they weren't legal residents of AR, then they can't be legally resistered there. If that's the case then perhaps the suit brought by the Dims has some merit. (As much as it pains me to say so.)

I'm willing to bet that all of these kids show up on their parents' income tax forms.

This ruling is because the kids are registered to vote at their home, and can't vote where they go to school. I agree. All of the "outrage" is just partisan spin to somehow defend illegal registration of voters. Calm down and listen to the reasoning. It appears to be sound judgement. It's the law.
Students who have legal residence in another state cannot vote where they go to college.
