The scope is attached rigidly to the parts that are rigidly attached to the barrel. Folding the action, disassembling it will not change the zero enough to matter in shootings like these.
Heck, there are even some very precisely manufactured scope mounts that allow you remove the scope and have it return close enough to zero that you need not re-zero it on a rest.

George with the precision, sturdiness and reliability of the scope mounts sold today and when mounted professionally. Once a weapon is sighted in. It is probably sighted in for life. I have taken a couple pretty good falls with my 30:06, and the gun has taken a worse fall. The sight was still right on after the falls.
These various bore sight systems can be a good way to check out your sights before you go hunting each morning or target shooting without firing the weapon at range.
As Fixit has noted some of the expensive mounts allow a scope to be removed for transportation or storage and then put back on without losing the accuracy of the sighting in.
