traditional TX BBQ is goat,beef,chicken and/or pork, cooked SLOWLY over either hickory or mesquite wood. cooking time is usually at least overnight, but MAY be 24 hours or more-longer is better!

we serve sauce WITH BBQ, rather than ON BBQ. usually TX sauce is tomato/beer based, often laced heavily with hot peppers.

we also, traditionally, serve beans WITH chili, rather than IN chili, thus the 2 bowls on a plate sets one often sees in TX kitchens.

last time i was in TX ibrought 6 dozen back with me on the plane- you should have seen the look on the security screener's face when he looked at the contents of the cooler i had then in!

evidently, they looked "suspicious!
