As far as grape juice fermenting quickly in that climate, without refridgeration, it most certainly would. Also, unpastuerized grape juice would be crawling with bacteria after only a few hours. It was common in the ancient world to drink beer or wine, it was simply a lot safer. If I remember correctly, there was a passage about not drinking water in foreign lands, but that may have been in the Canterbury Tales, it's been a long time.
