Either somebody is lying (more likely another employee rather than a customer) or, in fact, no one else other than Moul saw Ricci.

The police said that Moul was a credible witness. This could be because his account was the same as other individuals at the shop. It would not be neccessary to have all individuals appear before the Grand Jury unless there was some doubt that needed to be cleared up. What Angela said to the GJ may not coincide with her statements to the press. There is so much that we just don't know because it hasn't been released to the press.
