Do they...whoever they are...make wine w/o sulphites?

All wines contain some traces of sulfer dioxide (SO 2) as it is a natural byproduct of the fermentation process.

Winemakers generally add the stuff because of it's disinfecting properties. Added in sufficeint quantities, it will stop the fermentation process all together. Sulfites are needed to give the wine stability, preserve color and flavor, stop oxidation and preserve the wine from contamination from bacteria and wild yeasts. Sulfites are also used by growers to preserve the grapes from 'downy mildew.'

Generally sulfite agents are not intrinsically toxic although some people are allergic to them.

At any rate, there is no such thing as a wine entirely free of sulfites. "Organic wines" are not sulfite free either although generally they may have lower levels of sulfites in them.

Other food products that sulfites are found in in quantities similar to wine include fruit juice, dried fruits, fruit concentrates, syrups, sugar, jams, gelatins, cake topppings, baked goods, pizza dough, processed vegetables, cheeses as well as in many prescription drugs. About 4% of the general population is allergic to sulfites and evidently asthmatics are especially sensitive to them. Side effects include burning sensations, hives, cramps, flushing of skin and heartburn.

Okay, I will reply in the morn. Even so, just for thought...we have a list of willing participants and we use freepmail rather than pings. I think the pings set them off. We could also use a roster of the worst bashers for reference. We shall discuss tomorrow ohio....Sleep well.

Well, this is just peachy! In addition to wine, I shouldn't be eating any of the above mentioned items. I'm also asthmatic. Wonderful. Add all this to getting hit by a sledgehammer recently and you have a wonderful recipe for tears.

You'd be surprised at the huge amount of conservatives living here. I don't think LA's that good for our cause, but we regularly vote in the conservatives.

A couple friends of mine have weiner dogs. They *are* cute! I just don't like the yippy continual barking. Is that a characteristic of this particular breed or more of a lack of training on the part of my friends?
