We use the same recipe and barbeque the bird bird steaks on a seasoned Cedar wood plank using indirect heat.
After twelve minutes, we take the plank and big bird out of the Weber. Then I throw away big bird and slice up the cedar plank. My family prefers the cedar plank over the super dry/tough big bird. We use Port Orford cedar planks!
