I’m suspicious of this article.
It appears the writer took the Chinese Tang ping (lying flat) movement and overlaid the concept onto young Japanese workers.
It smells of journalistic plagiarism.

That sounds like a hazardous place to work. I recall the ice cream freezer at Farrell's was maintained at -10F. We had to bring the 5 gallon containers to the bar and allow them to warm to a reasonable scooping temperature. My boss insisted on having me scoop the entire contents of a 5 gallon container out as 2.5 oz scoops to ensure I could do it consistently. It was necessary to wear a short sleeve shirt at the fountain. A long sleeve would end up putting ice cream in your arm pits by the end of shift.
