The best pizzas are usually found at "mom and pop" owned stores. With chain pizza places, the focus becomes more on cost control so the quality of ingredients used diminishes and the labor is usually minimum wage employees with no stake in the business.

I've seen this happen whenever a very successful single-owned store goes the franchise route. Kelly's Roast Beef on Revere Beach for example. Or Frank Pepe Pizzeria Napoletana in New Haven.
