Surely when they pick all those fruits and veggies from the San Juaquin valley they must trim the dead parts, stems and other refuse off before bagging/packing them up for wholesale?

Let the convicts have all those trimmings! I’ll be that would save the state millions annually.

Actually, I love those stems and such, which are the complete basis for balsamic vinegar. The good ones are made from “must,” which are the stems fermenting.

It’s not a horrific thing. It’s something of real value, when used right.

They throw out tons of fruit. They have to be a certain size and shape for the grocery stores or people won’t buy them. Some times cattlemen will feed to their live stock. I’ve seen acres and acres of squash, cantaloupe, and watermelon get plowed under after they harvest the perfect ones.
