I make excellent grits, especially cheesy grits, and my favorite sides are fried green tomatoes and bacon. I bet I could win you over.

I wasn't considering the savory approach, and was assuming sugar or maple syrup as the main add-on. I am not sure what technique there can be in cooking grits.

It’s not the technique unless you don’t know how to boil water or stir from time to time, but more in the stuff you add, and how much of it. You don’t put sugar or maple syrup in grits. They need a bit of salt, and some butter, some half n half. Add grated cheese like sharp cheddar or gouda, and you have a winner. Best of all are the green tomatoes that are fried in bacon grease, also with said bacon. It’s a tummy pleasing meal.
