I live in the Detroit area, am familiar with the recent surge in popularity of ‘Detroit style’ pizza, love it and even make it at home.
The Post described it poorly, as it’s often made with sauce ‘racing stripes’ on top of the cheese rather than saucing the entire surface of the crust underneath. That’s what’s seen in the picture - part of one of the stripes. The cheese is typically Wisconsin brick cheese, although mozzarella is sometimes used in a mix with the brick, or as a substitute.
The edges, where the cheese touches the pan blends with oil on the focaccia-like crust, is often darkened by the higher temperature of the metal, and crisps up deliciously.
The pie in this picture is BURNED. There should just be a little of this well-done texture around the very edges.
I would never serve anything this badly prepared to any of my family or friends. Maybe the baker who made this monstrosity knew it was being served to Biden. If that’s the case, he’s my hero of the day! 😁
Love Detroit style pizza. It is becoming quite popular here on the mid Atlantic Coast. The crust is amazing if cooked right. My go to pizza now.
