I got SO such on Eggs Benedict about 40 years ago at Hilton Hawaiian Village that I haven’t been able to eat it for years. I think I might be test to give it a try again. Some of those variations look good.

I gathered you got sick on Eggs Benedict.....if that’s the case, it was likely the Hollandaise Sauce. Gotta be careful with that stuff.
Probably the hollandaise sauce was the culprit making you sick.
I occasionally in Ohio ate breakfast at Bob Evans.
I always ordered the same thing. They had an omelette with Hollandaise and hashbrowns with fruit cup. Haven’t been to Bob Evans for several years. Wonder if it’s still on menu.
It’s easy to make but wouldn’t want to make it for just me. Doubt if son Jeff would even try it
