I don't like it. If I want to run a cashless business for security or ease, then that's my choice. Similarly if I want to run an all cash business and not accept cards that should be my choice. Just make it clear to potential customers up front.
Will unmanned kiosks be required to accept cash too? Everyone loves those dollar bill readers that reject anything not fresh from the Treasury.

The real problem is banks charging customers fees for depositing cash over a certain amount in a monthly statement cycle therefore prohibiting cash implicitly.
The IRS hates cash and that's one reason why I love it.
The government has no right to know every single financial transaction in my life.
