There are indeed kosher insects. Make sure to roast them a bit... bacteria in the gut.
I don’t know about beetles. They maybe, I think deuteronomy 28 is the food laws. In a nutshell stay away from the meat of scavengers.

Make sure to roast them a bit... bacteria in the gut. The poop inside the gut gives it a rich flavor.
