is renting acceptable? is having the gov tax you on real property you own out right acceptable?

It's perfectly legal, it's up to you to decide if it's acceptable to you.

In most cases, the opposite is done. For starters, it's nearly impossible to completely avoid property taxes since you simply can't hide property, and its ownership is always registered. Many states have a lower property tax on one's permanent home called a 'homestead exemption'. People often attempt to declare the property with the HIGHEST tax as the one deserving the homestead exemption. There are many safeguards in place to prevent people from declaring more than one such exemption. It's very costly to get caught doing this.
