Vehicles do not start without def. There is no limp mode in my truck.May depend on brand. My F-I-L has a 2019 Duramax and he was ten miles out of the next town on the freeway when it went into limp-home mode and limited him to 10MPH until he could get more DEF. The stations out in the middle of nowhere really rip you off for it, too.

My 2021 Duramax does. The manual says it will remain in limp mode until it's filled.
