How do we know the case will even be appealed? The lawyers and judges can be harassed and threatened more easily than the jurors.

Personally, I believe this will be appealed, regardless of the possibility of threats to attorneys and judges.

I heard the defence attorney say they going to appeal during an interview on the radio.

Risk of malpractice against the defense lawyer. The case isn't over until the appeal has been denied.

Chauvin decides whether there will be an appeal or not. You can take it to the bank that there will be an appeal after the sentencing hearing.
