Wouldn’t that make “black” (or “white”) a racial slur as well, since it is a reference to skin color, just like “redskin”?

‘Redskin’ is not a reference to the color of the skin itself. It is a reference to the pigmenting of the skin of warriors. It’d be like Picts as blueskins.
